The best fajita!!!
ingredients:
4 tablespoons canola oil, divided
2 tablespoons lemon juice
1-1/2 teaspoon seasoned salt
1-1/2 teaspoon dried oregano
1-1/2 teaspoon ground cumin
1 teaspoon garlic oil
1/2 teaspoon hot pepper powder
1/2 teaspoon paprika
1/2 teaspoon crushed red pepper flakes (optional)
700gm boneless, skinless chicken breast, thinly sliced
1/2 medium sweet red pepper, chopped
1/2 medium green pepper, chopped
4 green onions, finely chopped
1/2 cup chopped onion
6 flour tortillas, warm
Optional: shredded cheddar cheese, taco sauce, salsa, guacamole, sliced red onion and sour cream
Instructions:
In a large bowl, mix together 2 tablespoons of the oil, lemon juice, and spices. Add chicken. Refrigerate for 1-4 hours.
In a large skillet, saute the peppers and onions in the remaining oil until soft. Remove it and keep it warm.
Drain the chicken, discarding the marinade. In the same skillet, cook chicken over medium-high heat until no pink color, 5-6 minutes. Return the pepper mixture to the pan; Heat it.
Take a spoonful of the mixture filling the center of the tortilla. Bend it in half. Add as desired, fold in half.
